Jalapenos control spiciness--more to make spicy

Ingredients

  • one lb. ground pork
  • one lb. ground veal
  • two eggs
  • 2 cups chopped button mushrooms
  • 2 cups chopped porchini mushrooms
  • one can chicken broth
  • four cloves minced garlic
  • two cups chopped onions
  • two Tbsp minced jalapeno peppers
  • one Tbsp minced fresh tyme
  • one cup whipping cream
  • kosher salt
  • fresh ground pepper
  • 1/2 cup olive oil

Directions

In a large, deep skillet, heat olive oil
Saute onions until transparent
Saute garlic
Add all mushrooms and saute until golden brown
Add chicken stock, jalapeno, thyme and cream and cook uncovered, stirring occasionally, on stove over medium low to medium heat until mixture thickens (about two hours)
Set aside and season with salt and pepper

Beat eggs, add them to meat that has been mixed well in a large bowl and season with salt and pepper

Add mushroom mixture to meat mixture and put into meat loaf pan

Bake in 350 degree oven until meat temperature reaches 160 degrees (normally about 1:20). Turn oven to broil and crisp up meatloaf top (only a few minutes)

Take out of oven and let sit for 10 minutes before serving

In large bowl, combine meat well and add eggs
