Wow! After all of those ingredients, no wonder why it is sooo expensive!!! serve with sangria: red wine and frozen orange juice mixed, serve over ice and place orange slices on top

Ingredients

  • 2 cups long grain rice
  • 1 tblsp powdered saffron
  • 2 whole onions diced
  • 4 gloves of garlic--smashed
  • 1 whole roasted pimento, peeled and diced
  • 4 cups chicken broth
  • 2 tblspns olive oil,for cooking
  • 1/2 cup Spanish olives/or black or mixture of both
  • 24 pieces of fresh shrimp, you can leave as much or none of the shell/head etc.
  • 1/2 lb fresh chopped calamari
  • 1/2 lb fresh any type of white fish
  • some crab legs
  • 1 lb baby clams
  • 1/2 lb Spanish (chorizo)sausage, not chorizo from the america's, or linquisa

Directions

Heat olive oil then sautee onions 4 min., add rice, garlic, sautee till lightly browned; add saffron, pimento, sausage, chicken broth (using your pinky; make sure that the liquid is half way up that finger; if not, add more broth or water)stir and bring to a boil, reduce heat to a very low simmer, cover tightly and cook for 15 min, last 5 min place seafood and olives on top and cover. Once rice is cooked, take off the stove and let cool for about 10 min. Still all the ingredients together and serve.
