Ingredients

  • 1/2 c. sugar
  • 1 TBL. cornstarch
  • 4 c. blueberries
  • 1 tsp. lemon juice
  • 3 TBL. shortening
  • 1 c. plain flour
  • 1 TBL. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk

Directions

Heat oven to 400 degrees. Mix 1/2 c. sugar & the cornstarch in 2-qt. saucepan. Stir in blueberries & lemon juice. Cook, stirring constantly, until mixture thickens & boils. Boil & stir 1 min. more. Pour into ungreased 2-qt. casserole, keeping mixture hot in oven.
Cut shortening into flour, 1 TBL sugar, the baking powder, and salt until mixture resembles fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot blueberry mixture. Bake until topping is brown, 25 to 30 min. Serve warm.
