This makes about 2 quarts
Ingredients
- 4 large potatoes, peeled and diced
- l large onion, diced
- l quart water
- l/2 cup minced parsley
- 2 teasp salt
- l/2 teasp pepper
Directions
Place all ingredients into a large saucepan. Cook uncovered over moderate heat for 40-45 minutes or till potatoes are soft, stirring occasionally.
With wooden spoon press some potatoes against sides and bottom of pan to break into small pieces
