An easier batter that's really good is plain flour mixed with salt and beer.

Ingredients

  • 1 c. plain flour
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1 beaten egg
  • 2 Tbl. cooking oil
  • 2 lbs. fresh or frozen shrimp
  • Plain flour
  • Shortening or cooking oil for deep-fat frying

Directions

For batter, stir together the 1 c. flour, sugar, and salt. Make a well in the center. Combine egg, the 2 Tbl. oil, and 1 c. cold water. Pour into dry ingredients. Beat til smooth.
Peel shrimp, leaving tail intact. Remove the vein. Pat dry with paper towel. Dip shrimp in plain flour, then dip into batter.
Fry in hot oil (375 degrees) a few at a time 2 to 3 minutes, or till golden. Remove to paper toweling.
