Ingredients

  • Garlic Powder
  • Fresh Rosemary
  • Seasoned Bread Crumbs
  • Dijon Mustard
  • Pesto
  • Sweet Butter

Directions

Brown Rack in hot, cast iron pan on top of stove
Let cool slightly, cover with garlic to your taste (lots)
Coat heavily with dijon mustard, roll in bread crumbs seasoned with lots of fresh rosemary, bake at 450 for 20 minutes for med. rare. Let set for 10 mins. after cooking, carve. Using same baking pan, put in about two tbsps. pesto, add some beef broth (about one cup), add 1/4 lb. sweet butter and reduce slightly. Serve instead of mint jelly with lamb. Try to use low salt beef broth. Enjoy
