I've made this and it's quite good. Very rich. But keep a close eye on the liquids as you don't want them to boil away.

Ingredients

  • 2 whole chicken breasts, halved & boned
  • Salt & pepper to taste
  • 3 tablespoons butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 6 oz. canned frozen orange juice concentrate, thawed
  • 1/2 cup salted almonds, toasted & chopped
  • 2 tablespoons bourbon

Directions

Season chicken with salt and pepper, to taste; brown in butter over medium heat. Reduce heat to low. Add orange juice, 1/2 tsp salt and 1/4 tsp pepper. Cover and cook until chicken is done--20 to 30 minutes(check your liquids and add more if nessesary). Spoon sauce over chicken while cooking. Remove chicken from pan and sprinkle with almonds. Keep warm. Reduce liquid over high heat and stir until slightly brown. Add bourbon and stir. Pour over chicken and serve over rice.
