Fried Pork Nuggets (Carnitas) Recipe

Ingredients:

  • 3 pounds pork loin
  • 1 teaspoon salt
  • 1/4 corn oil
  • 4 tablespoons pork lard

Directions:
Boil the pork slowly in enough salted water to cover
for 40 minutes. Drain then cut the meat into cubes. Heat
the oil and lard in a skillet and fry the pork cubes until
crisp and brown on all sides.
Carnitas may be used as a filling for tacos with guacamole or served in a mole sauce with rice and beans.
