Chang Kung is the Chinese God who watches over your wok.

Ingredients

  • 3 cups(raw) flat egg noodles, cooked in salted water;drained
  • 3 stalks broccoli, thinly sliced
  • 1 large onion, sliced
  • 1/2 lb. fresh mushrooms, sliced
  • 1 lb. fresh mung bean sprouts
  • 1/2 cup each-sliced water chestnuts& bamboo shoots
  • 1/2 lb. Tofu, cut into small chunks (about 3 cakes)
  • 2 Tbs. sesame oil
  • 3 Tbs. safflower oil
  • 1/4 cup sherry
  • 1/4 cup tamari
  • 1/2 tsp. freshly grated ginger
  • 1/2 tsp. dry mustard
  • Optional:
  • minced garlic sauteed
  • black mushrooms, softened in boiling water, sliced and sauteed
  • extra vegetables
  • Optional toppings:
  • toasted sesames and cashews
  • chopped scallions
  • green peppers

Directions

Saute onions, broccoli,ginger and mushrooms in safflower oil until tender. Add remaining ingredients; toss to mix and heat thoroughly. Top with optional toppings if using.
