Carrot Cake w/ Pineapple Recipe

Ingredients:

  • 1 1/2 cp white flour
  • 1 tbs cinnamon (more if preferred)
  • 1/2 cp vegetable oil
  • 1 cp sugar
  • 1 3/4 grated carrots
  • 1/4 c crushed pineapple (drained)
  • 1 tps baking powder
  • 1/2 tps salt
  • 2 eggs
  • 1/2 tsp vanilla
  • 1 cp chopped nuts (optional)

Directions:
Combine flour, baking powder, cinnamon and salt together; set aside. Combine vegetable oil, eggs, sugar, and vanilla in a small mixer bowl. Beat at high speed for 5 min. Add carrots, nuts (optional), and pineapple. Mix well. Stir in dry ingredients in three additions, mixing well after each. Spread batter evenly in a greased 9" pan. Bake at 325 F for approx. 40 min. Let rest 10 min before turning out. Cool completely. Serve plain or with icing.



I love this carrot cake, but I prefer it without the nuts or icing.
