Directions:
Combine flour, baking powder, cinnamon and salt together; set aside. Combine vegetable oil, eggs, sugar, and vanilla in a small mixer bowl. Beat at high speed for 5 min. Add carrots, nuts (optional), and pineapple. Mix well. Stir in dry ingredients in three additions, mixing well after each. Spread batter evenly in a greased 9" pan. Bake at 325 F for approx. 40 min. Let rest 10 min before turning out. Cool completely. Serve plain or with icing.
I love this carrot cake, but I prefer it without the nuts or icing.
