Ingredients

  • 3 cups of flour
  • 1-3/4 cups corn meal
  • 1 teaspoon soda
  • 2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3-1/2 cups milk
  • 1 cup molasses

Directions

1.Sift the dry ingredients all together.

2.Combine the milk and molasses.

3.Add the liquid ingredients to the dry ingredients, and beat with a wisp until smooth.

4.Now pour mixture into a well-greased 2 quart steam mold, cover, and place on a rack in a deep kettle that has a close fitting lid. Pour enough boiling water into the kettle tBo come about halfway up the mold.

5.Cover the kettle and steam the mold for about three (3) hours.

6.Take the mold out of the kettle and let it stand for about 20 minutes.

7.Take off the cover and let stand 10 minutes
longer.

8.Loosen the edges of the pudding with a spatula, invert the mold on a plate and let stand until the pudding turns loose or unmolds.

9.Serve with big gobs of fresh butter
