I like a really moist banana bread too, so instead of the 1 C. banana, I go with atleast 2-2 1/2 C.

Ingredients

  • 1/3 C. shortening
  • 1/2 C. sugar
  • 2 eggs
  • 1 3/4 C sifted flour (AP)
  • 1 tsp. bak.powd.
  • 1/2 tsp. bak. soda
  • 1/2 tsp. salt
  • 1 C.mashed ripe banana
  • 1/2-3/4 C.chopped walnuts

Directions

Cream together short. & sugar; add eggs & beat well.
Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each additin. Stir in nuts.
Pour into a well greased 9X5X3 inch loaf pan, bake in 350' oven 45-50 minutes or til done. Cool on rack.
