  French Chicken




More French Chicken Recipes

Ingredients:
  • 1 lb. raw chicken meat, ground 3 times
  • 1 c. fresh mushrooms
  • 2/3 c. pistachio nuts
  • 7 tbsp dry sherry
  • 1 tbsp sliced truffles
  • 3 eggs, beaten
  • 7 tbsp butter, softened
  • 1 1/2 tsp salt
  • Dash of white pepper
  • 2/3 c. soft bread crumbs
  • 1/2 c. milk
  • 1 tbsp brandy

Directions:
Grind chicken with mushrooms and nuts. Add sherry, truffles, eggs, butter, salt, and pepper. Soak bread crumbs in milk and brandy. Add to chicken mixture. Beat well until very smooth. Makes enough stuffing for one 6-pound chicken.



Forcemeats can be made of potatoes, cornmeal, chestnuts and even fruit. The ingredients must be ground several times to achieve as smooth a texture as possible. The other ingredients are beaten in to incorporate air and give the mixture lightness. I have additional recipes if you want to contact me direct.
