use the recipe as a guide. try roasted garlic scampi!!! its even better

Ingredients

  • 1 lb large shrimp
  • 1 med onion chopped
  • 1 cup chopped celary
  • seasonings (1 bay leaf, black pepper, sprig of parsley, sprig of thyme or 1/2 tsp dried thyme)
  • 1 cup white wine
  • 1 cup chicken stock or clam juice
  • 1 med head of garlic chopped finely
  • 2 Tbsp butter
  • 2 Tbsp flour
  • olive oil as needed
  • 1/2 tsp dried basil
  • 2 Tbsp chopped italian parsly
  • salt and pepper to taste

Directions

shell and devein the shrimp , keep shrimp on ice.
heat some olive oil in med pan add onion celary cook for 2 min add the seasoning. cook for 2 min - do not brown add the shells of the shrimp. cook until color is pink (2 min)
add wine, reduce to half( 3-4min)
add chicken or clam stock bring to a boil, then lower the heat to low and simmer for 20 min.
meanwhile, melt the butter in small pan add the flour cook for 2min stirring constantly set aside.
strain the shrimp stock, add the flour and butter - mix wisk it well.
bring back to boil. the sauce should cover the back of a spoon, simmer the sauce for 5 min on low heat.
In a large pan heat some olive oil add garlic and basil. cook for 1 min add shrimp cook till it turn to pink.
add the sauce cook for 5 min or till the shrimp is done( do not over cook)


serve over rice or linguni
