| Ingredients:
1 lb large shrimp
1 med onion chopped 1 cup chopped celary sesonings(1 bay leave,black pepper,sprig of parsly,sprig of thym or 1/2 tsp driedthym) 1 cup white wine 1 cup chicken stock or clam juice 1 med head of garlic chopped finly 2Tbsp butter 2Tbsp flour olive oil as needed 1/2 tsp dried basil 2Tbsp chopped italian parsly salt and pepper to tast
Directions:
shell and devaine the shrimp , keep shrimp on ice. heat some olive oil in med pan add onion celary cook for 2 min add the seasoningcook for 2 min donot brown add the shells of the shrimp cook until color is pink (2min) add wine reduce to half( 3-4min) add chicken or clam stock bring to a boilthen lower the heat to low and simmer for (20 min) mean while melt the butter in small pan add the flour cook for 2min staring constantly set aside strain the shrimp stock,addthe flour butter mix wisk it well bring back to boil the sauce should cover the back of a spoon,simmer the sauce for 5 minon low heat. In a large pan heat some olive oil add garlic and basil cook for 1 min add shrimp cook till it turn to pink add the sauce cook for 5min or till the shrimp is done( do not over cook) serve over rice or linguni
