Carrot Raisin Muffins Recipe

Ingredients:

  • CARROT RAISIN MUFFINS
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/2 cup shredded, carrots
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1 8 oz. can canned crushed pineapple
  • 2 eggs
  • 1/2 cup butter melted
  • 1 teaspoon vanilla

Directions:
Place all ingredients except raisins and nuts in a bowl and mix until just moist. Fold in nuts and raisins. Grease muffin tin for 12 muffins. Spoon in batter, filling 3/4 full. Bake at 350 degrees for 20 - 25 minutes.
