Spinaci Affogata-Smothered Spinach Recipe

Ingredients:

  • 1 pound spinach
  • 6 cloves garlic crushed
  • 3 Tbs. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. hot pepper flakes
  • Fresh black pepper, 4 twists of the mill

Directions:
Cut off the bases,wash the leaves twice in abundant cold water, and drain. In a large pot, saute the garlic in oil until golden but not brown. Add the remaining ingredients, cover, and cook over moderate heat 3-4 minutes, stirring occasionally. Remove and discard garlic; serve immediately.

Serves 4


Re: Garlic- Garlic cloves easier to remove if they are just left whole and "bashed" rather then crushed.
