Mexican Cornbread Recipe | ||

| Ingredients:
1 (8 1/2 oz.) pkg. corn bread mix
1 (8 3/4 oz.) can cream style corn 1/2 tsp. finely chopped jalapeno pepper, fresh or canned 1 (8 oz.) c. sharp cheddar cheese
Directions:
Prepare cornbread as directed on package. Add corn and jalapeno peppers. Spread half of batter in a greased 8" square pan. Dot with half of cheese. Add remaining batter, spread evenly, dot with remaining cheese. Bake at 375 degrees for 25 to 30 minutes or until done. More jalapenos may be used, to taste.
