You can find the thick sweet soy sauce and the Sambal(ground red pepper paste) at the Holland American Market on Artesia in Bellflower.

Ingredients

  • Marinade:
  • Chicken tenders
  • Thick sweet soy sauce mixed with regular soy sauce and some fresh ground garlic (2 to 3 cloves).
  • Sauce:
  • 1/2 C Creamy peanut butter
  • Thin with water and add hot chile
  • pepper paste to taste.

Directions

Marinade the chicken tenders in the soy mixture from 12 to 24 hours.

Lace on to skewers (if using wood skewers, soak in water for 2 to 3 hours to help prevent burning).

Grill until done, turning often.

Heat peanut butter thinned with water and chile sauce. DO NOT BOIL. Spread over grilled chicken and serve with additional peanut sauce for dipping.

Excellent side dish with fried rice or Indonesian fried noodles.
