Directions:
Bring 10 cups of water to a boil in a large pot. Separate the strands of noodles and,when the water is at a rolling boil,drop them in.Let the water come to the boil again. Pour in 1 cup of cold water from the faucet. The boiling will subside. Let the water come to the second boil. Pour in a second cup of cold water.Let the water come to a third boil. Drain the noodles in a colander,run cold over them and rinse. Let them drain for 5 minutes. Put the noodles in a serving bowl. Add 1 tbs. of the sesame oil to them and toss. You can,if you wish, cover, and refrigerate the noodles at this stage for a couple of hours. Combine the 1/4 cup peanuts,1 tbs.sesame oil,peanut oil,soy sauce,vinegar,sugar,cayenne,and 1/4 water in a food processor or blender. Blend until you have a smooth sauce. Crush the remaining 1 tbs. peanuts to a coarse crumb texture in a spice grinder,mortar,or food processor. When you are ready to eat,pour the sauce over the noodles and toss. Garnish by putting strips of scallions in a heap on top of the mound of noodles and top with peanut crumbs. Serve this way and toss at the table, preferably with chopsticks. Serves 4 if eaten with other dishes.
NOODLES: If you have no access to fresh noodles, use spaghetti or thin Japanese buckwheat noodles-ki-soba-cooked al dente. This dish may also be served hot. Do not rinse the noodles after draining them and toss, while still very hot,first with the 1 tbs. sesame oil and then with the peanut sauce. Enjoy
