Ingredients

  • Pastry for 2 crust 9-inch pie
  • 2 large lemons
  • 2 cups sugar
  • Dash salt
  • 4 eggs

Directions

Wash lemons and slice very thinly, discarding ends and seeds. Combine sugar with a dash of salt. In a bowl, toss the lemon slices with the sugar mixture. Cover and refrigerate at least 2 hours or over night, turning the lemon slices gently a few times.

Preheat oven to 450 degrees. Roll out half of pie dough to 1/8-inch thick. Fit into bottom of pan. Beat eggs lightly, then stir into lemon mixture. Turn into prepared crust, arranging lemon slices evenly. Cover with top crust, trim and crimp edges. Cut several slits near center of crust. Make at 450 degrees for 15 minutes, then lower heat to 375 degrres and bake for about 20 minutes or until a knife inserted near edge of pie comes out clean. Cool before serving.
