CHOCOLATE MAYONNAISE CAKE Recipe

Ingredients:
FOR THE CAKE:
2 cups all-purpose flour
1/4 cup + 1 tbsp. cocoa
1 cup sugar
1 tsp. baking soda
Pinch salt
1 cup water
1 cup mayonnaise
1 1/2 tsp. vanilla extract

FOR THE CHOCOLATE FROSTING:
2 3/4 cups sifted powdered sugar
1/4 cup + 1 tbsp. cocoa
1/4 cup butter, melted
2 egg yolks
2 tbsp. milk
1 tsp. vanilla extract
1/8 tsp. salt

Directions:
FOR THE CAKE:
Mix the first 5 ingredients well.
Add next three ingredients; stir until smooth.
Pour batter into a greased and floured 9-inch square pan.
Bake at 350 for 25-30 minutes or until cake tests done.
Cool.
Spread with frosting.

FOR THE FROSTING:
Combine all ingredients.
Beat until smooth.


Yields: cake-9 servings frosting-enough for 1 9-inch cake
