Ingredients

  • 1/2 cup sliced mushrooms
  • 1/2 cup green peppers, cut in strips
  • 3/4 cup diced celery
  • 2 tablespoons butter
  • 1 1/2 tablespoons chicken fat or butter
  • 1 3/4 tablespoons all-purpose flour
  • 1/2 cup chicken stock
  • 1/2 cup scalded milk
  • 1/4 cup scalded cream
  • 1/2 teaspoon salt
  • 1 1/2 cups cold boiled chicken, cut in chunks
  • 1/4 cup canned pimentos
  • 1 egg yolk, slightly beaten
  • 1 teaspoon dry sherry

Directions

Saute the mushrooms, green peppers, and celery in butter. Set aside.

Melt fat, add flour, and stir until well blended; then add gradually, while stirring constantly, stock, milk, and cream. Bring to the boiling point and add salt, chicken, mushroom-pepper-celery mixture, and pimento. Again bring to the boiling point, reduce heat, and add egg yolk. Stir until smooth and add sherry.

Serves 4.

Can be served on potato nests, patty shells or toast points with crusts removed
