Ingredients:

  • 3 c. grated white potato
  • 2 tbsp. grated onion
  • 4 beaten eggs
  • 1/3 c. flour
  • 1 tsp. salt
  • A squirt of lemon

Directions:
Place grated potatoes in a colander over a bowl. Salt lightly and let stand 15 minutes. Rinse and squeeze out well to get rid of all the extra water. Combine all ingredients and mix well. Fry slowly in butter in a heavy skillet until brown and crisp. Serve immediately, topped with a little sprinkling of sugar, a dollop of sour cream and/or applesauce.
