Ingredients

  • 1 cup dry lentils
  • 2 1/2 cups water
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1 cup uncooked brown rice
  • 2 1/2 cups water
  • 1/2 teaspoon salt
  • 1 cup stewed tomatoes, cut into pieces
  • 1 teaspoon Italian seasoning

Directions

Place lentils, 2 1/2 cups water, onion, and 1/2 teaspoon salt in a saucepan. Heat to boiling; reduce heat and let simmer for 25 to 30 minutes or until lentils are tender. While lentils are cooking, combine brown rice, 2 1/2 cups water, and 1/2 teaspoon salt in a separate saucepan. Simmer for 40 minutes or until rice is soft. Stir rice into lentil mixture; add tomato pieces and Italian seasoning.

Serve immediately as a stew, or place in a casserole dish and bake at 350 degrees F. for 30 minutes.

Yield: approximately 4 servings
