Ingredients

  • 1 C. sugar
  • 1/2 C. shortening
  • 1/2 C. buttermilk
  • 1/4 tsp. salt
  • 2 C. oatmeal
  • 2 C. white flour
  • 1/2 tsp. soda
  • Filling:
  • 1 small pkg. dates (about 8 oz.), chopped
  • 1/2 C. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. lemon juice
  • 1 C. water

Directions

In a saucepan, boil the filling ingredients to a paste; cool. Cream shortening; add sugar and mix until creamy. Add soda to buttermilk and add to mixture alternately with flour and salt. Add oatmeal to make a soft firm dough. Chill in refrigerator for an hour or more. Remove from refrigerator in small portions and roll out on a floured board. Roll quite thin (about 1/8") and cut out with a small round cookie cutter. Bake 10 minutes on an ungreased cookie sheet at 325 deg. Remove from oven onto brown paper and cool. Cookies may be stored in airtight containers, or frozen until ready to use. Then spread filling on one circle, cover with second circle to form sandwiches.
