The interview said that she uses whatever cheese happens to be in her 'fridge. I like Gruyere, but my family prefers Cheddar so I use Cheddar most of the time. This really is the best grilled cheese sandwich I've ever eaten.

Ingredients

  • 2 slices heavy/dense white bread
  • shredded sharp cheddar cheese
  • thinly sliced red onion
  • mayonnaise
  • Dijon mustard
  • melted butter

Directions

Spread a thin layer of mayonnaise and then mustard on both slices of bread. Arrange red onion over mustard on both slices of bread. Arrange an even layer of shredded cheese over the onions on one slice of bread, cover with the other prepared slice of bread. Brush melted butter on top slice of bread, place sandwich in a skillet over medium to medium-low heat buttered side down, brush melted butter over remaining slice of bread. Cook sandwich until golden brown on one side, flip and cook until golden brown on remaining side. Serve immediately. Can be kept warm for a short period, but it gets soggy when it sits too long.
