Directions:
In large sauce pan, heat oil over medium heat. Add mushrooms, onion, bell pepper and garlic. Cook for 8-10 minutes, stirring frequently. Add broth, barley, rice, mustard and seasonings. Bring to a simmer, then cook uncovered for 50-60 minutes, stirring occasionally. Remove from heat and let stand 10 minutes before serving
By increasing/decreasing the onion and garlic, this soup can be either tame or truly robust.
