Ingredients

  • Artichokes, any size
  • Freezer bags or containers

Directions

Select those whith uniformly green color, compact globes & tightly adhering leaves. Size has little to do with quality or flavor. Remove outer bracts until light yellow or white bracts are reached. Cut off tops of bud, and trim to a cone. Wash the hearts in cold water as soon as trimming is complete. Drain. Blanch 7 minutes. Cool Drain. Pack into containers. Seal, label & freeze.
