Sopaipillas (Fried Biscuit Puffs) Recipe

Ingredients:

  • 2 c. all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp. salt
  • 1 tbsp. shortening
  • 2/3 c. lukewarm water
  • Fat for frying
  • Honey or sugar & cinnamon

Directions:
Stir together flour, baking powder, and salt. Cut in the shortening till mix resembles cornmeal. Gradually add the water, stirring with a fork (dough will be crumbly). Turn onto floured surface; knead into a smooth ball. Divide dough in half; let stand 10 min. Roll each half into a 12 1/2" x 10" rectangle. Cut into 2 1/2" squares (do not reroll or patch dough). Fry a few at a time in deep hot fat (425) till golden. Drain on paper towels. Serve with honey or rull in sugar-cinnamon mixture. Makes about 40.
