Chicken Madadamia Recipe

Ingredients:

  • 2 - 2 1/2 pounds boneless chicken breasts, skinned
  • Batter:
  • 2 eggs
  • 1/2 cup flour
  • 1/4 cup cornstarch
  • 1 tablespoon finely chopped fresh ginger
  • 1 medium onion, grated
  • 1/2 teaspoon black pepper
  • 2 tablespoons peanut oil
  • 2 tablespoons brandy
  • 2 tablespoons soy sauce
  • Salt to taste
  • Peanut oil for deep frying
  • Sauce:
  • 6 tablespoons brown sugar
  • 3 tablespons soy sauce
  • 1 1/2 tablespoons cornstarch
  • 1/2 cup vinegar
  • 3/4 cup cold water
  • Chopped macadamia nuts
  • Cooked rice

Directions:
Cut each chicken breast in 6 pieces. Mix the batter ingredients in a blender. Marinate the chicken pieces in the batter for 20 minutes. Meanwhile, combine the sauce ingredients and simmer over low heat for 15 minutes. Deep fry the chicken pieces in peanut oil at 350 degrees for 8 to 10 minutes or until done. Drain. Place the chicken over cooked rice. Spoon on the sauce and top with macadamia nuts.

Chicken can be marinated and fried a half hour or so ahead and kept warm in a 200 degree oven. Or batter can be made ahead and refrigerated.
