LEMON CREAM SCONES Recipe

Ingredients:
2 c. flour
1 tsp. salt
4 tbsp. sugar
1 tbsp. baking powder
3 tbsp. butter
2 egg yolks, well beaten
1/3 c. heavy cream
1 tbsp. finely chopped lemon balm
1/2 tsp. grated lemon peel

Directions:
Stir together flour, salt, sugar and baking powder. With pastry blender cut in butter. Beat egg yolks and add to cream. Stir egg mixture and flour mixture together to form soft dough. Turn out on floured board; knead. Roll out about 1/2" thick and cut with small round cookie cutter. Place on ungreased baking sheet, brush with milk and sprinkle with sugar. Bake at 450 degrees for 10 to 12 minutes until lightly browned. Serve with jelly.
