Key Lime Pie - Contemporary Resort Recipe

Ingredients:

  • 1/3 cup sugar
  • 1 envelope unflav. gelatin
  • 1/4 cup fresh lime juice
  • 3 egg yolks, slightly beaten
  • 2 tsp. grated lime peel
  • 2 cups heavy cream
  • 1/8 tsp green food coloring
  • 1 9" graham pie shell

Directions:
In top of double boiler mix sugar and gelatin. Combine lime juice and egg yolks and blend into sugar mix. Cook over simmering water until thick, stirring constantly. Remove from heat, stir in lime peel and cool. Whip cream with food color until still and fold into cooked mixture. Pour into crust. Chill until firm,
This is not the traditional key lime pie as served thru out florida....
