Directions:
Put the sugar and water into a heavy saucepan. Swirl the handle to mix. Place on high heat and let cook until if forms a soft ball. DO NOT STIR. Beat sugar mixture into egg and continue beating until cool, so you don't melt the butter when you add it. Cream the butter, add the egg mix. Beat unti fluffy and smooth. Flavor with melted, unsweetened chocolate.
I got this recipe in a cooking class given by Donna Nordin, who appeared in Bon Appetit during the late 70's/early 80's. A wonderful dessert chef.
