TOFU BURRITOS Recipe | ||

| Ingredients:
2 c. tofu, squeezed and shredded
2 c. hot salsa 8 whole wheat flour tortillas (warmed by wrapping in a tea towel and placing in steamer or oven) 1 c. radish sprouts 1/2 c. chopped tomatoes 2 c. black beans, cooked 1 c. seitan
Directions:
Place the mashed tofu in a bowl with 1 cup of the salsa. Let this mixture marinate at room temperature for 30 minutes. Meanwhile, prepare the other ingredients and heat the beans in a saucepan. Mince the seitan to have consistency of chopped meat. To assemble the burritos, place a large spoonful of the tofu-salsa mixture in the lower corner of the tortilla. Layer beans, then seitan, sprouts, tomato and more salsa over the tofu. Roll the burrito away from you, folding in the two sides and tucking the top edge under as you roll. Bake on a non stick surface for 10 to 15 minutes, then serve. Add more salsa if desired, hot stuff! |
