Basque Marinade for Meats Recipe

Ingredients:

  • 3 T olive oil
  • 2 cloves of garlic, finely chopped
  • 1 med. onion, finely chopped
  • 1 green pepper finely chopped
  • 2 small cans of tomato sauce
  • 1 can whole pimento, chopped
  • 1 tsp sugar

Directions:
Saute the onion, garlic and green pepper in olive oil until golden brown. Add the tomato sauce, pimento and sugar. Simmer slowly for 15 minutes.




After cooling the marinade, place meat to be marinaded in the sauce, or cook the meat directly in the marinade until meat is fork tender
