I usually don't measure the ingredients so you may have to experiment with the amounts.
- 1 lb. blue crab meat (preferably jumbo lump or backfin)
- 1 egg
- worcestershire sauce (1 t or so)
- lemon juice (a splash)
- Old Bay Seasoning (to taste)
- a little dry mustard
- bread crumbs (very fine)
Pick through the crab meat and remove any shell. Mix together crab meat, egg, worcestershire, lemon juice, dry mustard, and Old Bay. Add just enough mayo and bread crumbs to hold the cakes together. DO NOT ADD TOO MUCH!
Sprinkle each crab cake with a little Old Bay and broil or fry until golden brown (I prefer broiled).
