Ingredients

  • 2 ripe avocados, halved, seeded, peeled and cut up
  • 1/2 of a small onion, cut up
  • 1 (14 1/2 oz.) can chicken broth
  • 1/2 cup light or fat free dairy sour cream
  • 1/2 cup milk
  • Dash paprika
  • Salt and pepper, to taste
  • Salsa (optional)

Directions

In a blender container or food processor bowl, combine avocados, onion, chicken broth, sour cream, milk and paprika. Cover and blend or process until the avocado mixture is smooth and creamy. Transfer to a glass bowl. Cover and chill for at least 2 hours. Season with salt and pepper. If necessary, stir in additional milk to reach a desired consistency. Ladle into chilled bowls. Garnish with salsa if you like.


4 to 6 servings.
