Ingredients:

  • 2 large ripe avocados, pitted and peeled
  • 1/2 teaspoon salt
  • 1 cup evaporated skim milk
  • 2 teaspoons fresh-squeezed lime juice
  • 2 cups chicken broth
  • 1/4 cup dry sherry
  • Garnish with thin lime slices, fresh cilantro sprigs and sour cream, if desired

Directions:
In a blender of food processor, combine avocados, salt, milk and lime juice; process to a smooth puree. Heat broth in saucepan. Pour puree into a warmed bowl or tureen; slowly add hot broth. Stir in sherry.

This is a quick and easy version of an avocado soup that was shown on camera for the California Avocado Board. Use a double boiler for heating or the soup will curdle. It can be served warm or chilled
