Ingredients:

  • 4-6 lb. boneless beef rib roast
  • 1 tbsp Worchestershire sauce
  • 1 tsp. garlic powder
  • 3 tbsp cracked pepper
  • 2 (4 lb.) pkgs. rock salt
  • 1/2 c. water

Directions:
Brush roast with Worcestershire sauce; sprinkle with garlic powder. Rub pepper on all sides of roast. Pour rock salt to a depth of 1/2" in a disposable aluminum foil roasting pan; place roast in center of pan. Add remaining rock salt, covering roast. Sprinkle with water. Bake at 5-- for 12 minutes per pound or until meat thermometer registers 145 (medium-rare) or to desired degree of doneness. Crack salt with a hammer; remove roast and brush away rock salt. 8 servings.

This method keeps the roast tender & juicy. No, it isn't too salty! A disposable pan is a MUST. You'll be thankful you don't have to scrub the clingy rock salt from your favorite roaster.
