Ingredients:

  • 2 cans (15 oz.) garbanzo beans
  • 2 med. tomatoes, chopped
  • 3 green onions, thin sliced
  • 3/4 c. snipped fresh parsley
  • 3/4 c. (4 oz.) finely cubed cheddar cheese
  • 1/3 c. vegetable oil
  • 1/2 tsp. cumin (may substitute chili powder)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions:
Combine first 5 ingredients in medium size bowl. Mix remaining ingredients. Pour over bean mix, cover and refrigerate at least 1 hour.
