Poor Man's Lobster Recipe

Ingredients:

  • White fleshed fish, cut in chunks
  • 2 quarts water
  • 1/2 cup sugar
  • 1/4 cup salt
  • Juice of 1 lemon
  • Melted butter and lemon juice for dipping

Directions:
Combine water, salt, sugar and lemon juice in large kettle; bring to boil. Drop in the fish and boil, just until fish rises to the surface. Serve with melted butter and lemon juice. Leftovers make a good "Mock Lobster" salad.



This is the way we do it in Alaska! Halibut is the preferred fish, but cod or burbot work well also.
