Ingredients:

  • 2 (15 oz.) cans black beans, drained & rinsed
  • 1 c. chopped tomato
  • 3/4 c. chopped sweet red pepper
  • 2/3 c. sliced green onions
  • 1/2 c. chopped celery
  • 1 tbsp lemon rind
  • 1 clove garlic, minced
  • 2 tbsp chopped cilantro (opt)
  • 1 (0-.7 ox.) enelope Italian salad dressing mix
  • 3/4 c. water
  • 1/4 tsp. red pepper
  • 2 tbsp. olive oil

Directions:
Combine first 7 ingredients and, if desired, cilantro leaves; set aside. Combine dressing mix and remaining ingredients in a jar. Cover tightly; shake vigorously. Pour over salad, and toss gently. Cover and chill. Toss gently before serving. 8 servings.
