Ingredients

  • 1 cup red beans
  • 4 slices bacon, diced
  • 1 onion , chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 scotch bonnet pepper, finely minced
  • 2 ribs celery, chopped
  • Salt and pepper to taste
  • 4 cups coconut milk
  • 2 cups rice

Directions

Most traditional of all Caymanian dishes, sometimes called peas and rice, but still made with small red kidney beans.
This is a delicious recipe for it.

Prepare and soak beans - (pick through beans, remove rocks, etc. wash, drain, and cover with water. Soak overnight. If running late, cover with water, bring to boil, turn off hear, cover and let set 2-3 hours. Drain and wash.)

After soaking, cover with water, and cook until tender. Saute bacon and add onions, peppers and celery. Add to beans. Season to taste, add rice and coconut milk. Stir well, cover, and cook over low heat. When rice puffs to top of liquid, stir with fork, uncover, and finish cooking for about 10-15 minutes longer.


Serves 10-12.
