Put the celery, onion, and chicken stock in a soup pot, bring to a boil, reduce heat, and simmer, partially covered, for 30 minutes or until the celery is tender. Don't use the dark-green outer stalks of the celery; the tender, inner stalks have a better consistency and flavor for this soup.
