Cream of Celery Soup Recipe

Ingredients:

  • 6 stalks celery, chopped
  • 1/2 onion, sliced
  • 2 cups(1/2 L)Chicken stock or canned broth
  • 1 1/2 cups(3 1/2dL) light cream
  • Salt to taste

Directions:
Put the celery, onion, and chicken stock in a soup pot, bring to a boil, reduce heat, and simmer, partially covered, for 30 minutes or until the celery is tender. Put through a strainer or vegetable mill or puree in a blender or food processor. Return to pot. Add the cream and salt and reheat slowly. (4 cups



Don't use the dark-green outer stalks of the celery; the tender, inner stalks have a better consistency and flavor for this soup.
