Ingredients:

  • 1 large thin skinned lemon
  • 1 tablespoon salad oil
  • 1 cup chicken broth
  • 7 tablespoon sugar
  • 2 tablespoon lemon juice
  • salt to taste
  • 1 tablespoon cornstarch
  • 1 tablesoon water

Directions:
Cut the lemon in thin slices; discard seeds and end pieces. In small pan, heat the salad oil over medium heat . Add lemon slices and stir fry for 30 seconds. Add the chicken broth , sugar and salt . Simmer 2 minutes. Blend the cornstarch and water. Pour into sauce and cook , stirring , until sauce bubbles and thickens slightly. Pour over chicken just before serving.
