Broccoli Cheddar Soup For Two Recipe

Ingredients:

  • 1/4 c chopped onion
  • 1/4 c butter or margarine
  • 1/4 c all-purpose flour
  • 1/4 t salt
  • 1/4 t pepper
  • 3/4 c chicken broth
  • 1 1/2 c milk
  • 1 c chopped cooked fresh or frozen broccoli
  • 1/2 c shredded cheddar cheese

Directions:
In saucepan, saute the onion in butter until tender. Stir in flour, salt and pepper. Cook and stir until smooth and bubbly. Add broth and milk all at once; cook and stir until the mixture boils and thickens. Add broccoli. Simmer, stirring constantly, until heated through. Remove from the heat and stir in cheese until melted. 2 servings
