Ingredients:

  • 2 Tablespoons Vegetable Oil
  • 1 pound Ground Beef Round
  • 1 Green Bell Pepper, Seeded and Chopped
  • 2 Stalks Celery, Chopped
  • 1 large Onion, Chopped
  • 3 Cloves Garlic, minced
  • 3 1/2 to 4 cups peeled and chopped tomatoes (about 30 oz. canned)
  • 1 cup tomato sauce
  • 4 cups Beef Stock
  • 2 Tablespoons Chili Powder
  • 1 Tablespoons Ground Cumin
  • 2 Teaspoons Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Dried Oregano
  • Dash Hot Pepper Sauce
  • 1 Cup Cooked Pinto Beans

Directions:
Heat the oil in a large saucepan and saute' the meat, green pepper, celery, onion, and garlic. Cook this mixture until the vegetables are tender and the meat is browned, about 10 minutes.
Add the tomatoes, tomato sauce, 3 1/2 cups of the beef stock, the chili powder, cumin, salt, pepper, oregano and the hot pepper sauce. Bring the chili mixture to a boil, then reduce the heat and simmer for 1 1/2 to 2 hours. Add the remaining beef stock if the chili is too thick.
Add the pinto beans and continue to simmer for 30 minutes"
