I would adjust the dressing to suit myself as this is a large quantity for 6 Australians.

Ingredients

  • 1 long leaf lettuce torn in shreds
  • 2 small carrots in matchsticks
  • 2 small white radishes in match sticks
  • 2 small cucumbers halved lengthwise and seeded
  • 1 starfruit halved lengthwise and sliced
  • OPTIONAL
  • 3 tomatoes in wedges
  • 500g/ 1lb prawns steamed and peeled
  • Dressing:
  • 15 red chillis (can reduce if liked)
  • 6-8cloves garlic
  • 1cup bottled Chinese plum sauce
  • 1 cup sweet red sauceor 1 cup light palm sugar syrup
  • 1/2 cup lime juice
  • 2tbsps light soy sauce
  • 1 tbsp sesame oil
  • 1/2 cup peanuts roasted (no salt) and ground
  • Garnish:
  • deep fried prawn crackers
  • fresh coriander/ cilantro leaves
  • fried shallots (available in Asian groc stores)

Directions

Blend chillis and garlic in food processor/blender/mortar. Add little plum sauce to keep blades turning.

When finely ground add rest of dressing ingredients except peanuts, blend just to combine and set aside . Add peanuts just before serving.

Prepare all remaining ingredients. Divide between 6 plates, starting with lettuce and finishing with prawns. Pour dressing on top and garnish or serve separately for people to help themselves.

Different brands of plum and red Chinese sauce vary in sugar content so adjust to your taste. If using palm sugar syrup, boil 200g/ 7 1/2 fl.oz with 1 1/2 cups of water until dissolved.
