Ingredients
- 1 C sugar
- 1/2 C white corn syrup
- 1 C roasted, salted peanuts
- 1 tsp butter
- 1 tsp vanilla
- 1 tsp baking soda
Directions
In 1 1/2 qt casserole or wide bowl, stir together sugar and syrup. Microwave on High 4 minutes. Stir in peanuts. Microwave on High 3 - 5* minutes, until light brown. Add butter and vanilla, blending well. Microwave on High 1 - 2* minutes. Peanuts will be lightly browned and syrup very hot. Remove bowl from microwave. Add soda and stir gently until light and foamy. Pour immediately onto lightly greased cookie sheet. Let cool 1/2 to 1 hour. When cool break into small pieces and store in air tight container. These times are adjustable. In my own oven, I cook, after adding the peanuts, for 3 minutes and after vanilla for 2 minutes. What's nice about this recipe is the peanuts are already roasted, so there's not so much chance of burning the candy, although I've done that, too
