Mexican Anise Cookies Recipe

  Mexican Cookie

Ingredients:
1 c. lard
1/2 c. sugar
2 eggs
1 1/2 t. anise seed
1/2 t. vanilla
1 T. baking powder
About 2 1/2 c. to 3 c. flour
cinnamon and sugar mixture/1/4 c. sugar to 1 t. cinnamon

Directions:
Using your hands, squeeze and mix the lard, sugar, eggs, anise, vanilla until well mixed....gradually add flour until you can form a ball and it is not sticky. Cover with plastic wrap and chill for several hours. Roll out on floured board until 1/4 th inch thick, place on greased cookie sheet 1 inch apart...sprinkle with cinnamon and sugar mixture. Bake 375 for 7 to 10 minutes...or light brown...cool on racks
